Ondulation 2020 est un vin blanc sec issu de Gros Manseng, mêlant un élevage en cuve et pour moitié un élevage en fûts de chêne, et demi-muids de chêne neuf. Il s'agit d'un vin précis, dense, exprimant toute la typicité de ce cépage. La robe est jaune paille; le nez révèle des arômes d'agrumes, de noisette grillée, et la bouche saline, très droite, se termine par une mâche dense et épaisse, classique dans ce type d'élevage, finale beurrée à la bourguignonne.
